The story begins with one of Elvis Yu's business trips in 2015. He watched a documentary called "Can Eating Insects Save the World?" on the plane, which explored urban development and the issue of food waste. As the global population grows, the supply of high-quality protein is becoming increasingly inadequate, leading to malnutrition in many parts of the world. Elvis Yu was inspired to investigate insect protein as a potential solution to this problem. After returning to Hong Kong, he has researched extensively and focused on the black soldier fly, an edible insect protein that the Food and Agriculture Organization of the United Nations has started to promote globally.

“Black soldier fly is an insect that can be called perfect,” Elvis Yu once introduced in a media interview, “First of all, their life cycle is short, so they must eat and digest organic matters very quickly. 10,000 black soldier fly larvae can process about 800 kg of organic matters in 24 hours. Secondly, the larvae are highly adaptable, which allows them to decompose diverse organic wastes. More importantly, black soldier flies are mostly distributed in areas with little human activity within the latitude of 40 degrees north and south. This means that they are unlikely to carry viruses from humans or farmed animals, and there is no risk of infestation. As a result, black soldier flies have become the preferred choice for insect-based bioconversion.”
